Jevin's 1st Trip to the Dentist



Jevin had a great visit at the dentist! He was a super helper and listened carefully to what the dentist and hygienist told him about his teeth. His teeth are in good shape and Jevin said he really liked the taste of the toothpaste they used to polish his teeth - he picked bubblegum!

Southwest Salad with Black Beans and Corn

2 cans black beans, drained and rinsed
2 cans corn, drained and rinsed
3 cloves garlic, minced
1/2 cup well minced red onion
1 medium red bell pepper, chopped
1 medium carrot, chopped
1 tsp. salt
1/2 c. olive oil
1/2 cup fresh lime juice (3-4 limes)
2 tsp. cumin
1/2 cup fresh cilantro, minced
1/2 cup fresh parsley, minced
1/2 cup fresh basil, minced
1 tsp. crushed red pepper (adjust amount to taste)
moderate amount freshly ground black pepper

Mix thoroughly. Chill before serving as a side salad. Use leftovers over hot rice or in tortillas.

Mango Chutney

2 mangoes, chopped
2/3 c. red bell pepper
2 Tbls. chopped fresh cilantro
1/3 c. minced red onion
2 Tbls. white wine vinegar
1 Tbls. sugar
1/2 tsp. salt
1 tsp. pepper
1 Tbls. olive oil
1-2 avacados

Mix all ingredients except the avacado. Chill for at least 30 minutes. Add avacado before serving. Serve over grilled chicken or salmon.

New Veronica Quotes

Veronica has had a couple new noteworthy quotes this week:

First, Veronica was asking me to give her math problems, so I said, "Veronica has 24 students in her classroom. The teacher wants to create 3 reading groups with equal number of students in each group. How many studnets are in each group?" After thinking for awhile, she said, "Seven." I gave a questioning "hmmmm......" Veronica quickly realized her error and said, "Three students are absent!"

Second, earlier in the week we read the Bible story in which Jesus fed 5,000 people. After reading the story I said, "I wonder if there are any meanings that we can find in this story." Veronica immediately said, "I know a meaning, I know a meaning!" Pointing at the picture of the small basket containing 5 loaves and 2 fish, she said, "This basket is like a heart that is filled with love." She then pointed to the picture of the crowd who was eating plenty, with baskets of food left over and said, "And this is what happens when you give your love to other people. There's enough love for everyone, with some left over. "
