Mulligatawny Soup

Saute lightly, but do not brown:
1 medium diced onion
2 diced carrots
4 diced ribs of celery
in:
2-3 Tablespoons of olive oil and
1/4 cup butter

Stir in:
3 Tablespoons flour
4 teaspoons curry powder
Stir and cook these ingredients 2-3 minutes

Pour in and simmer 15 minutes:
8 cups chicken broth
2 bay leaves

Add and simmer 15 minutes longer:
1/2 - 3/4 cup diced tart apples
1 cup boiled rice
1 cup cooked, diced chicken
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. thyme
1 tsp. grated lemon rind (or 1 Tbsp. lemon juice)

Immediately before serving, add:
1 can coconut milk
